Soft cake roll Recipe
With a nod to those classic desserts and treats, a soft cake roll come to mind, a light as a feather sponge cake with an irresistible cream filling.

Ingredients:
- 4 large eggs, room temperature
- 50g granualted sugar
- 50g plain flour
- ½ tsp baking powder
- 3 tbsp milk
- 50ml Clover Classic spread, melted
- 1 tsp vanilla essence
- Pinch of salt
- Filling
- 100g cream cheese
- 100ml double cream
- ¼ cup icing sugar
- 1 tsp vanilla essence
- Icing sugar for dusting
- Berries for garnish
How To Make Soft cake roll
- Preheat the oven to 170C.
- Separate the egg yolks from the egg white.
- Add the egg yolks to a mixing bowl along with the sugar and whip until pale and thick.
- Fold in the melted Classic spread and vanilla essence.
- Sift in the flourand baking powder and fold through the mixutre
- Whip the egg whites till stiff peaks and fold into the egg yolk mixture.
- Pour the mixture into a lined baking tray and bake for 15-17 minutes, or until a toothpick comes out clean.
- Combine the filling ingredients using an electric beater or whisk.
- Once the cake comes out of the oven, flip onto a tea towel and roll the cake up into a log.
- Allow to cool.
- Once cooled, gently unroll and spread over the filling.
- Roll back up with a tea towel.
- Wrap with cling wrap and chill in the fridge until ready to use.
- Garnish with a dusting of icing sugar and berries before slicing and serving
