Clover Classic Spring Day Bread
Baking is a real art when it comes to this beautifully decorated bread!
Serves: 6-8
Time: 1 hr 30 minutes
Recipe by: Monicia Horne
Ingredients:
2 tbsp yeast
1 cup warm water
1 tablespoon sugar
3 tablespoons extra-virgin olive oil,
2 tbsp Clover Classic Fat spread, melted
1 1/2 cups bread flour
1 1/4 cups flour
Pinch of salt
Salt flakes for topping
1 clove garlic, thinly sliced
Rosemary
Olive oil for drizzling
For the topping:
Small yellow/orange peppers, asparagus, spring onions, cherry tomatoes, rec onion, sliced, Italian parsley
Method:
Pour the yeast into the warm water and let stand to dissolve for 5 to 10 minutes. Stir in the sugar and two tablespoons of the oil and Clover Classic Fat spread
In a large mixing bowl, combine the flours and salt. Work the yeast mixture in using your hands, then turn out onto a well-floured board. Knead for 5 minutes, adding additional flour until the dough loses its stickiness.
Place the ball of dough in a floured bowl. Cover with a tea towel and let it rise for about an hour in a warm place
Punch the dough down, then turn it out onto a well-floured board. Roll out into a rectangular shape. Let rise again for 30 to 40 minutes.
Preheat the oven to 180ºC.
When the dough has finished rising, poke holes into its surface with your fingers, at even intervals.
Drizzle the remaining tablespoon of olive oil over the top.
Arrange your “garden” followed by the garlic, coarse salt, and herbs.
Bake for 20 minutes, or until the bread is golden on top and sounds hollow when tapped. Let cool for a few minutes, then serve warm, cut into pieces.
Chefs Tip:Allow enough time in between resting for the dough to sufficiently rise
