Clover Classic Sticky Aubergine Meatballs with Noodles

It’s the start of a new fresh week and if you are looking for some Meatfree Monday – we’ve got just the inspiration you need.

Ingredients:

2 large Aubergines, cut into small cubes
1 red onion, diced
2 garlic cloves
½ cup breadcrumbs
½ handful coriander, finely chopped
200g egg noodles
2 tbsp Clover Classic spread
125g tenderstem broccoli
½ cup teriyaki sauce
3 birds eye chilli
¼ cup spring onion, diagonally sliced
40g peanuts, toasted

Method:

Make the aubergine balls by melting Clover Classic Spread in a pan add the onions and saute for 2 minutes, add the aubergine and season. Saute for 5 minutes then add the garlic and continue cooking until nicely coloured but not too soft. Add the aubergines, breadcrumbs and coriander to a food processor and pulse until the mixture comes together. Season to taste. Shape into little balls and onto a prepare large plate, cover with clingfilm and chill in the fridge for 30 minutes. Cook the egg noodles as per packaging instructions and toss with Classic spread after draining. Saute the broccoli in a pan until charred and tender, and set aside. In the same pan, add Classic Spread and fry the meatballs until golden. Add the chilli and teriyaki sauce and stir. Plate the noodles in a bowl, topped with the meatballs and broccoli. Garnish with the spring onion and peanuts. Serve immediately

If you do miss the meat, add beef mince to your aubergine mixture and fry them off until cooked
