Clover Classic Vegetarian Egg Roll Tacos

It’s the start of a new fresh week and if you are looking for some Meatfree Monday inspiration – we’ve got just you need.

Ingredients:

For the egg roll wrappers
1-2 cups flour
1 egg
Pinch of salt
Water warmed with 1 tbsp Clover Classic fat spread

For the filling
2 tbsp Clover Classic Fat spread
2 cups cooked lentils
1 cup tomato pasata
Salt and pepper to taste
1 tbsp taco seasoning
1 tsp brown sugar

For the salsa
1 small red onion, finely diced
2 tomatoes, diced
Handful fresh coriander, chopped
Squeeze of lime juice
Salt and pepper to taste

Method:

To prepare the egg roll wrappers, place the flour, egg and salt into a bowl. Gradually add the water, 1 tablespoon at a time, until a soft dough forms. Allow the dough to rest for 20 minutes.
