Recipe by: Monicia Horne

Ingredients:

2 tbsp Clover Olive Pride Blend
1 onion, diced
500g beef mince
2 cloves garlic, chopped
1 tbsp dried mixed herbs
1 tin chopped tomatoes
1 tsp brown sugar
Salt and pepper to taste
Few basil leaves, chopped
300g Orecchiette pasta, cooked
250g cottage cheese
1-2 cups grated cheddar cheese

Method:

Heat the Olive Pride in a large frying pan and sauté the onion until translucent. Add the beef mince and break up with the wooden spoon. Cook until golden brown.
Add garlic, herbs, chopped tomatoes, sugar and season with salt and pepper. Stir in the chopped basil. Allow to cook for a few minutes. Scoop two thirds of the mixture into a bowl.
Place a single layer of cooked orecchiette pasta over the mince mixture in the pan. Spoon over half of the cottage cheese and some of the grated cheese. Repeat the layering until your mince mixture is used up. Sprinkle with the rest of the cheese, cover with lid and allow to simmer until pasta is tender. Alternatively preheat the oven to 180C and bake for 35-40 minutes until orzo is cooked.
