Clover Elite Cheese and Chilli Chicken Beignets
A beignet with a creamy cheese pull, filled with chilli and chicken, is perfect to keep your taste buds entertained.

500g ready made bread dough
125g red pepper pesto
3 green chillies, finely chopped
1 cup Clover Cheddar cheese, grated
1 cup shredded cooked chicken
Oil for deep frying
Serve with dipping mayo of your choice
Heat the oil for frying.
In a bowl, combine the pesto, chillies, cheese and chicken. Season with salt and pepper.
Lightly dust your work surface with flour and roll the dough out to 3mm-5mm thickness.
Cut the dough into 5x5cm squares
Spoon one tablespoon of the chicken mixture onto one dough square. Top with another square and pinch the edges to seal in the filling
Place the beignets in the oil and fry until golden brown on both sides
Serve and enjoy with a dipping mayo of your choice.
Chefs Tip: Depending on the size of the beignets, you can make them bite size or bigger to suit the usage occasion.
