Apple Blondies with Maple Glaze
Brownies are such a classic, but have you ever tried a blondie? In basic terms its a brownie without the chocolate.

Ingredients:
3-4 Apples, peeled & cored
125g Clover classic fat spread, melted
225g Muscovado sugar
1 Large free-range egg
2 Tbsp butter
1 tsp vanilla essence
1 ¼ Cups flour
½ tsp baking powder
pinch of salt
Maple Glaze:
½ Cup Maple syrup
1 cinnamon stick
Method:
Preheat the oven to 180°C and line a 20cm x 20cm baking pan with baking paper.
Slice the apples into segments and place into a preheated pan with the butter and allow too cook for 6-8 minutes. Then set aside.
Place the fat spread, brown sugar, egg, and vanilla in a large bowl and using an electric hand mixer to mix until its well combined.
Add the flour, baking powder, and salt and mix with the electric mixer or use a spatula. Fold in caramelized apples.
Decant the batter into the prepared tin and smooth it out. Bake for 25-30 minutes or until golden brown.
Allow to cool in the pan before removing the tray by pulling the baking paper out. Cut into squares and serve with some maple glazed poured over the top.
To make the maple glaze, place the maple syrup and cinnamon stick into a sauce pot and reduce by half, then pour over the freshly baked brownies before serving.
Chefs Tip: The brownie can be slightly wobbly in the center when baked as it would add to the fudgy texture of the blondie.
