Clover Elite Cheese Stuffed Mushrooms

In the comfort of your home, you can enjoy a crunchy and  creamy cheese pull with a mushroom center.

Ingredients:

X4 braai or big brown mushrooms
200g cream cheese
¼ piquante peppers, drained and chopped
½ cup sundried tomatoes, chopped
1 tsp garlic powder
½ red onion, finely chopped
Salt and pepper to taste
1 cup Clover Elite Cheddar cheese, grated
1 cup Clover Elite Tussers cheese, grated
2 disc Clover Feta, crumbled

Fresh salad leaves, like rocket, for serving

Method:

Remove the stems of the mushrooms by cutting it out.
In a large bowl, mix together the cream cheese, piqaunte peppers, sundried tomatoes, garlic powder, finely chopped red onion, Clover Elite cheese, except the feta , reserving some of the grated cheese for the topping. Season with salt and pepper.
Scoop the mixture into the bases of the mushrooms. Top with reserved grated cheese and place onto a greased and lined baking tray to bake in the oven at 180C for 20-25 minutes, until the mushrooms are cooked through. If doing on the braai, wrap the stuffed mushrooms in foil and grill until cooked through.

Garnish with crumbled feta whilst still warm and serve with fresh salad leaves.

Chefs Tip: You can also use smaller mushrooms for this recipe and use it as an appetizer.
