Golden Cloud Passion Fruit Mocktail & Sweetcorn and Chicken Lagan
This sweetcorn and chicken lagan are perfect blend of authentic spices, enjoyed with a glass of passion fruit mocktail.

Passion Fruit Mocktail:
75ml Rose’s Passion Fruit Cordial
3 tbsp mint, chopped
1 green chili, slivered
1 apple, grated
Sweetcorn & Chicken Lagan:
½ cup Golden Cloud Semolina
½ cup Gram/ Chickpea (Besan) Flour
½ cup Golden Cloud Flour
2 ½ tsp baking powder
½ tsp turmeric
½ tsp white pepper
1 tsp cumin powder
1 onion, finely chopped
3 tbsp fresh coriander, finely chopped
3 tbsp fresh mint, finely chopped
1 cup shredded chicken
2 green chilies, finely chopped
1 tsp garlic paste
1 tsp ginger paste
½ cup milk
½ cup sunflower oil
419g Koo Cream style Sweetcorn Can
Salt to taste
For passion fruit mocktail:
Place the crushed ice in a jug. Add the cordial, mint, green chili and apple into a jug. Top with lemonade.
Sweetcorn & chicken lagan:
Sift and combine the semolina, flour, besan flour, baking powder. Preheat oven to 180C.
To the flour, add turmeric, white pepper, cumin powder, onion, coriander, mint, chicken, green chilies, garlic paste, ginger paste and salt. Mix to combine
In a separate bowl, beat the eggs, milk and sunflower oil.
Fold in egg mixture to the flour mixture, fold in creamstyle sweetcorn.
Pour into a greased deep baking dish. Bake at 180C for 25-30 minutes.
Chefs Tip: Golden Cloud Semolina flour is the best flour for this recipe, its coarse texture makes for the perfect lagan.
