Clover Fresh Milk Pesto & Chicken Rice
There’s no denying that load shedding can affect the way we cook and eat. Make the most of your Sunday left overs, add some fresh ingredients like Clover Fresh milk and you will have the most satisfying meal – now you’ve got the power!

Ingredients:
3 cups left over cooked rice
3 rotisserie chicken breasts,
Salt and pepper to taste
2 spring onions, chopped
2 celery sticks, chopped
Handful fresh parsley, chopped
Juice and zest of 1 lemon
1 tsp dried chilli flakes
1 cup Clover Fresh milk
½ cup pesto (basil or coriander
Handful cherry tomatoes, halved
Fresh basil leaves
Parmesan shavings
Method:
To a large mixing bow, add the rice, spring onions, chopped celery, fresh parsley, juice and zest of lemon and mix together.
Place onto serving platter. Shred the chicken into chunks and place on top of rice, add the cherry tomatoes and season with salt and pepper.
Mix together the pesto and Clover Fresh milk and drizzle over the chicken and rice. Toss together, garnish with fresh basil and parmesan shavings to serve
Chefs Tip:
– You can add any left overs from your Sunday roast or Braai to this recipe – you could even swop out the rice for pasta
– Keeping it meat free? Dice up those veggies that are on the verge of decaying and add it into the rice mix.
