Clover Fresh Milk Savoury Chicken Cupcakes

Tis the season for soul food and with the goodness of Clover Fresh milk, the possibilities are endless. Everyone loves a delicious cupcake with various types of icing – but have you ever tried a savoury cupcake with mash potato as the icing topped with fried chicken?

Ingredients:

For the savoury muffins
2 cups self raising flour
½ cup grated cheese
1 tsp cayenne pepper
2 spring onions, chopped
1 tsp garlic powder
2 tsp chopped chives
1 cup Clover Fresh milk
80ml oil
1 large egg, beaten


For the mash topping
3 large potatoes, boiled
½ cup Clover Fresh milk
Salt and pepper to taste

Crispy Fried chicken bites for garnish
Gravy for drizzling

Method:

Preheat the oven to 180C.
Prepare the muffin batter by combing the flour, cheese, spring onions, garlic powder, cayenne pepper and chives in a bowl. Make a well in the centre and beat in the Clover Fresh milk, oil and egg, until just combined.
Scoop the mixture into a greased muffin tray and bake for 15-20 minutes until a skewer comes out clean.
