½ cup Fruits of the forest dairy snack, berry flavour 3 eggs 1 tsp zest of lemon 1 tsp vanilla essence ½ cup vegetable oil 1cup sugar +1 tbsp for sprinkling 2 cups flour + 1 tbslp for berries 1 cup desiccated coconut 2 tsp baking powder pinch of salt 2 cups assorted berries, chopped
Buttercream icing for serving Fresh berries for garnish Coconut flakes for garnish
Method:
Preheat the oven to 180C.
In a bowl, whisk together the Fruits of the forest, eggs, lemon zest, vanilla essence, oil and sugar until smooth. Add in the flour, coconut, baking powder and salt and whisk to combine. Toss the berries with 1 tablespoon of flour then fold into the batter. Transfer the batter to a greased baking tin and sprinkle castor sugar and coconut on top. Bake for 40-45 minutes or until a skewer comes out clean.
Allow to cool and serve with icing, berries and coconut flakes
Chefs Tip: You can change this recipe with a different flavour Fruits of the Forest and different fresh fruit for the toppings.
