Clover Fruits of the Forest Creme Brulee French Toast

French toast is one of the easiest brunch recipes that is perfect to serve a few, a crowd or in our instance, a crew!

Serves: 4-5

3 knobs butter
½ cup brown sugar
6 thick bread slices
4 eggs
1 cup milk
1 tsp vanilla essence

For the Fruits of the Forest mousse topping
2 egg whites
pinch of salt
pinch of cream of tartar
½ cup castor sugar sugar
200ml Fruits of the Forest, Strawberry flavour

Fresh berries for garnish
Icing sugar for dusting


To make the mousse, whisk the egg whites with a pinch of salt and sugar in a heat proof bowl over a pot of simmering water until the sugar dissolves. Remove the bowl from the heat and beat with a mixer until stiff peaks form.
Fold in the Fruits of the Forest and allow to chill in the fridge.

To make the French toast, whisk together the eggs, milk and vanilla essence in a large bowl. Dip the bread slices into the egg and allow to soak for a few seconds. Melt the butter in a large saucepan and allow to cook until golden brown on each side. Add a thin layer of sugar to each toast and caramelize with a blow torch. You can also place it under a hot oven grill until the sugar start to caramelize.

When serving, place Brulee French toast onto a serving plate. Dollop of the Fruits of the Forest mouse and garnish with berries and icing sugar
