Clover Fruits of the Forest French Berry loaf cake
What’s one way to have a good morning turn into a great morning? Having cake for breakfast, we say! And if you think you won’t have time to whip up a delightfully fruity cake.

1 ½ cups flour
2 tsp baking powder
Pinch of salt
1 cup sugar
2 cups frozen berries
¾ cup Clover Fruits of the Forest, mixed berry or strawberry flavour
½ cup vegetable oil
2 large eggs
1 tsp vanilla essence
Icing sugar for dusting
Preheat the oven to 180C.
Whisk flour, baking powder and salt in a bowl. Keep a few berries aside and add the rest to the flour mixture, coating them well.
In a separate bowl, whisk together the eggs, sugar, oil and vanilla essence and stir in the Fruits of the Forest.
Combine the wet ingredients with the dry and pour the batter into a prepared loaf tin. Top with the berries kept aside and bake for 50-55 minutes.
Allow to cool in loaf tin before dusting with icing sugar, slicing, and serving.
