Clover Krush Plant Power Protein Bowl

For the crispy tofu
1 block firm tofu
1 cup seasoned flour (seasoned with salt, pepper, onion powder, garlic powder and paprika)
2 eggs, beaten
1 cup panko breadcrumbs, seasoned
Oil for frying

For the Krush sweet and sour dressing
¼ red onion, roughly chopped
Thumb size ginger, roughly chopped
1 cup pineapple, roughly chopped
½ cup Krush orange juice
1 tbsp Dijon mustard
2 tbsp agave nectar/maple syrup
3 tbsp mayo
Pinch of salt
Squeeze of lemon

For the bowl
Sauteed spinach
Brown rice
1 cup butternut cubes, roasted
1 avo, sliced
1 cup baby tomatoes, halved


Cover the tofu block with paper towel and press down gently to allow excess liquid to be dried.

Slice the tofu into thick strips or cubes and dip into the seasoned flour, then egg and coat with seasoned panko crumbs. You might need to double dip into the egg and panko. Fry until golden and crispy and set aside.

Blend together the ingredients for the Krush dressing. Assemble the bowl with crispy tofu, spinach, rice, butternut, avo and tomatoes. Drizzle with dressing and serve with a refreshing Krush juice.

Chefs Tip: You can use any kind of veggies or if you don’t like tofu, use another meat-alternative to keep it plant based!
