2 large eggplant, halved 1 large zucchini, chopped ½ onion, diced 2 cloves garlic, chopped 100g mushrooms, chopped 300g beef mince 1 cup quinoa x1 tin chopped tomatoes 1 tsp dried oregano salt and pepper to taste 1 cup grated cheese of choice
Method:
Heat oil in a large pan and sauté the onion. Add in the garlic, beef mince and mushrooms and sauté for a few minutes until the mince is browned. Add in the zucchini and eggplant and cook for another few minutes. Pour in the chopped tomatoes , quinoa and season with dried oregano, salt and pepper. You can also add a dash of sugar to balance the acidity of the chopped tomatoes
Once cooked down and the quinoa is tender, scoop the mixture into eggplant boats and top with the cheese. Bake for 20-25 minutes and garnish with fresh herbs. Serve with a refreshing Krush.
