Olive Pride Cheese & Tomato Gnocchi Bake
If you get bored of pasta as a midweek meal option, simply pick up a pack of gnocchi and turn it into a hearty delicious dish, like our Olive Pride Cheese and tomato Gnocchi bake. It makes for the most satisfying vegetarian supper and Jenny shows us how its done.

Ingredients:
500g gnocchi
3 tbsp Olive Pride Blend
1 tbsp butter
2 garlic cloves, chopped
1 tsp chilli flakes
1 tbsp dried mixed herbs
x1 tin cherry tomatoes
Salt and pepper to taste
1 tbsp sugar
1 cup grated mozzarella cheese/buffalo mozzarella
Fresh basil leaves
Method:
In a large pan, heat the Olive Pride. Add in the butter, garlic, chilli flakes, mixed herbs and tomatoes. Season with salt, pepper and sugar and allow to simmer for a few minutes until slightly reduced.
Cook the gnocchi according to packet instructions and place into a baking dish. Pour over the tomato sauce and stir in some fresh chopped basil. Top with cheese and bake for 15-20 minutes, until the cheese is melted.
Once baked, drizzle with Olive Pride Extra Virgin Olive oil and garnish with fresh basil leaves.
