Clover Krush Thai Inspired Noodle Salad

A great way to help get in your 5-a-day!

Ingredients:

1 medium carrot, julienned
1 bell pepper, julienned
½ cucumber, deseeded and julienned
2 spring onions, chopped
Handful fresh coriander, chopped
Handful fresh mint, chopped
300g vermicelli /rice/egg noodles
50g roasted peanuts, chopped

For the dressing
1 tbsp fish sauce
2 tbsp light soy sauce/tamari
1 tsp honey/maple syrup
1 tbsp sesame oil
1 tbsp Krush orange

Method:

Place the noodles into a bowl and cover with boiling water. Leave for 5 minutes, then drain the water.

Add to a bowl along with the veggies and prepare the dressing and pour over the noodles and veggies. Dish into a serving bowl garnish with nuts and serve with a refreshing glass of Krush juice.
