Malva pudding Recipe
Undoubtedly one of South Africa’s most loved desserts, malva pudding worked its way into the hearts and tummies of many.

Ingredients:
- For the pudding
- 1 cup flour
- 1 cup sugar
- 1tsp baking soda
- ¼ tsp salt
- 1 tbsp Clover Mama bake Magarine
- 1 egg
- 1 cup of milk
- 2tbsp smooth apricot jam
- 1 tsp vanilla essence
- 1 tbsp vinegar
- For the sauce
- 1 can evaporated milk
- ½ cup cream
- Zest of 1 orange
- 80g Clover Mama Bake Margarine
- 80 grams sugar
- For serving
- Custard, cream or ice-cream
- Dried apricot for garnishing
How To Make Malva pudding
- Pre-heat the oven to 180-degree Celsius.
- Heat your knife under hot water to get the perfect cut margarine cubes for this recipe
In a large bowl combine the Clover mama bake and sugar, using a hand mixer, beat until light and fluffy. - Add in the egg, apricot jam, vanilla, milk, vinegar and mix until smooth and lump free.
- In a separate bowl combine the dry ingredients and sift into the wet ingredients, use a spatula and mix until a smooth batter forms.
- Grease a baking dish with Clover Mama Bake Margarine and pour in the batter, bake for 35-40 minutes or until a skewer comes out clean.
- To a saucepot add in the ingredients for the sauce and over medium heat allow the mixture to come to temperature, until the sugar and margarine melts. Remove from the heat and pour directly over your hot malva sponge.
- Allow the pudding to rest for 5 -10 minutes and serve with custard.
