Clover Nolac Mash Potato Cake

The creamiest lactose-free mash potato!

Serves: 4-5

Ingredients:

4-5 large potatoes, peeled
1 egg
½ cup flour
2 spring onions, finely chopped
Salt and pepper to taste
1 clove garlic, finely chopped
1 tsp nutritional yeast
2 tbsp margarine
¼ cup Clover Nolac milk
Handful fresh chives, chopped
½ cup seasoned panko breadcrumbs mixed with 1 tbsp mixed dried herbs

Method:

Bring the potatoes to boil in salted water and cook until tender. Add to a large bowl and mash up then add in the egg,flour, garlic, spring onions, margarine, nutritional yeast and season with salt and pepper. Mash and adjust the texture with the Clover Nolac milk, until it reaches a smooth texture.

Place a greased ring mold onto a greased baking sheet and scoop the mash mixture into it. Remove the mold and coat with breadcrumbs. Alternatively, scoop the potato into a greased muffin tin and sprinkle with the panko crumb mixture.
Bake in the oven for 15-20 minutes or until golden in colour. Serve warm.

Chefs Tip: You can also use a muffin tin to make the potato cakes instead of the round ring mold.
