Clover Olive Pride Chocolate Cake

A delicious, moist chocolate cake for the weekend.

500g vanilla cake mix
2 tbsp cocoa powder
125ml Olive Pride Blend
2 tsp vanilla essence
2 large eggs
250ml milk
2 -3 tbsp chopped dark chocolate

For the ganache topping
300g dark chocolate
1 tin coconut cream
3 tbsp maple syrup


Preheat the oven to 180C
In a large mixing bowl, combine the cake mix and cocoa powder. Mix together and make a well in the centre. Add in the eggs, vanilla essence, milk and Olive Pride Blend. Make a well in the centre and stir in the wet ingredients, then fold in the chopped chocolate. Pour the batter into a greased and lined baking tin and bake for 25-30 minutes, or until a skewer comes out clean.

To make the ganache, heat the coconut cream and stir in the chopped chocolate and maple syrup. Whisk to combine and allow to set slightly in the fridge. Once set, slightly whisk and spread over the cake. Slice and serve.
