Creamy Lemon & Thyme Chicken

There’s nothing quite like a creamy chicken dish! 

Ingredients:

  • 6-8 chicken pieces
  • Salt & black pepper, to taste
  • 1 tsp garlic powder
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • 4 cloves garlic, minced
  • 1 cup chicken stock
  • Juice & zest of 1 lemon
  • 1 tsp Dijon mustard, optional
  • 1 Tbsp fresh thyme leaves
  • ½ cup cream
  • ½ cup grated Parmesan

To serve:

  • Lemon slices
  • Fresh thyme sprigs

How To Make Creamy Lemon & Thyme Chicken

  1. Pat chicken pieces dry and season with salt, pepper, and garlic powder.
  2. Heat olive oil in a large pan over medium-high heat.
  3. Sear the chicken for 4-5 minutes per side until golden brown.
  4. Remove and set aside.
  5. In the same pan, melt butter and sauté garlic until fragrant.
  6. Pour in the chicken stock, lemon juice, lemon zest, Dijon mustard, and thyme.
  7. Stir and let simmer for 2-3 minutes.
  8. Return the chicken to the pan, cover, and simmer on low for 20-25 minutes until fully
    cooked.
  9. Stir in the cream and Parmesan.
  10. Let simmer for another 3-5 minutes until the sauce thickens.
  11. Garnish with lemon slices and fresh thyme.
  12. Serve over mashed potatoes, rice, or crusty bread.
  13. Enjoy!

Chefs Tip: Sear the chicken well before simmering for a nice golden crust and crispy skin. You can also substitute the cream with coconut cream or Greek yoghurt.
