
Creamy Lemon & Thyme Chicken
There’s nothing quite like a creamy chicken dish!
Ingredients:
- 6-8 chicken pieces
- Salt & black pepper, to taste
- 1 tsp garlic powder
- 1 Tbsp olive oil
- 2 Tbsp butter
- 4 cloves garlic, minced
- 1 cup chicken stock
- Juice & zest of 1 lemon
- 1 tsp Dijon mustard, optional
- 1 Tbsp fresh thyme leaves
- ½ cup cream
- ½ cup grated Parmesan
To serve:
- Lemon slices
- Fresh thyme sprigs
How To Make Creamy Lemon & Thyme Chicken
- Pat chicken pieces dry and season with salt, pepper, and garlic powder.
- Heat olive oil in a large pan over medium-high heat.
- Sear the chicken for 4-5 minutes per side until golden brown.
- Remove and set aside.
- In the same pan, melt butter and sauté garlic until fragrant.
- Pour in the chicken stock, lemon juice, lemon zest, Dijon mustard, and thyme.
- Stir and let simmer for 2-3 minutes.
- Return the chicken to the pan, cover, and simmer on low for 20-25 minutes until fully
cooked. - Stir in the cream and Parmesan.
- Let simmer for another 3-5 minutes until the sauce thickens.
- Garnish with lemon slices and fresh thyme.
- Serve over mashed potatoes, rice, or crusty bread.

Chefs Tip: Sear the chicken well before simmering for a nice golden crust and crispy skin. You can also substitute the cream with coconut cream or Greek yoghurt.
