What's In The Fridge?

Are you stuck at staring at the fridge, filled with random bits of leftovers from the weekend? We give you three ideas to turn those leftovers into new delicious meals!

Ingredients:

  • 300 g pasta (penne, fusilli or tagliatelle)
  • 1 cup leftover roast meat (chicken, lamb or beef), shredded
  • 1 cup leftover roasted vegetables, chopped
  • 1 clove garlic, minced
  • ½ onion, finely chopped
  • 1 cup cream (or a mix of cream and milk)
  • ½ cup grated Parmesan or cheddar
  • 1 tbsp olive oil or butter
  • Salt and pepper
  • Fresh parsley, chopped (to serve)

How To Make Creamy Sunday Roast Leftover Pasta

  1. Cook pasta in salted boiling water according to package instructions. Drain and reserve ½ cup pasta water.
  2. Heat olive oil or butter in a pan. Sauté onion and garlic until soft and fragrant.
  3. Add the leftover roast meat and vegetables and warm through.
  4. Pour in the cream and simmer for 2–3 minutes.
  5. Add the cooked pasta and a splash of reserved pasta water to loosen the sauce.
  6. Stir in grated cheese and season with salt and pepper.
  7. Toss until creamy and well combined.
  8. Serve topped with fresh parsley and extra cheese.

  • 4 flour tortillas
  • 1 cup leftover roast meat (chicken, beef or lamb), shredded
  • ¾ cup leftover roasted vegetables, chopped
  • 1 cup grated cheese
  • 2 tbsp chutney or sweet chilli sauce
  • 1 tbsp oil or butter

How To Make Leftover Roast Meat & Veg Quesadillas

  1. Lay tortillas flat and spread a little chutney or sweet chilli sauce over one half.
  2. Add shredded meat, roasted vegetables and cheese.
  3. Fold tortillas in half.
  4. Heat oil or butter in a pan and cook quesadillas until golden and crispy on both sides.
  5. Slice into wedges and serve.
  6. Serve with: yoghurt, guacamole or salsa.

  • 1 cup leftover vegetables
  • 1 small onion, chopped
  • 1 cup gravy or stock
  • 2 cups leftover mashed potatoes
  • ½ cup grated cheese
  • 1 tbsp oil

How To Make Sunday Roast Cottage Pie

  1. Preheat oven to 180°C.
  2. Heat oil in a pan and sauté onion until soft.
  3. Add leftover meat, vegetables and gravy; simmer for 3–4 minutes.
  4. Spoon mixture into a baking dish.
  5. Spread mashed potatoes over the top and sprinkle with cheese.
  6. Bake for 20 minutes until golden and bubbling.
