Creamy Tomato & Basil Pasta

Ingredients:

  • 2 cups penne pasta
  • 2 Tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • ½ cup tinned tomatoes
  • ½ cup vegetable stock
  • 1 Tbsp fresh basil, chopped
  • ½ cup dairy-free butter or margarine
  • ½ cup flour
  • 1 cup Clover Nolac Lactose Free Milk
  • Salt & pepper to taste

How To Make Tomato & Basil Pasta

  1. Start by cooking pasta according to packet instructions.
  2. Heat olive oil in a large non-stick skillet, add in onions and cook until translucent, then add in garlic to allow this to cook until fragrant.
  3. Add in tomato, vegetable stock, basil and allow this to cook for 3 minutes until slightly reduced.
  4. Season to taste with salt & pepper, then remove from the heat and set aside.
  5. Meanwhile prepare the bechamel sauce, place dairy-free butter into the a saucepan over medium heat and allow it to melt.
  6. Once the butter has melted whisk in the flour and let it cook for about 1 minute.
  7. Gradually add in milk while continuously whisking until the sauce is thickened, season the sauce with salt & pepper.
  8. Add cooked pasta and bechamel to the tomato mixture and mix well.
  9. Serve immediately and garnish with fresh basil. Enjoy!
