Creamy Tomato & Basil Pasta

Ingredients:
- 2 cups penne pasta
- 2 Tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, chopped
- ½ cup tinned tomatoes
- ½ cup vegetable stock
- 1 Tbsp fresh basil, chopped
- ½ cup dairy-free butter or margarine
- ½ cup flour
- 1 cup Clover Nolac Lactose Free Milk
- Salt & pepper to taste
How To Make Tomato & Basil Pasta
- Start by cooking pasta according to packet instructions.
- Heat olive oil in a large non-stick skillet, add in onions and cook until translucent, then add in garlic to allow this to cook until fragrant.
- Add in tomato, vegetable stock, basil and allow this to cook for 3 minutes until slightly reduced.
- Season to taste with salt & pepper, then remove from the heat and set aside.
- Meanwhile prepare the bechamel sauce, place dairy-free butter into the a saucepan over medium heat and allow it to melt.
- Once the butter has melted whisk in the flour and let it cook for about 1 minute.
- Gradually add in milk while continuously whisking until the sauce is thickened, season the sauce with salt & pepper.
- Add cooked pasta and bechamel to the tomato mixture and mix well.
- Serve immediately and garnish with fresh basil. Enjoy!
