Crispy Peri-Peri Potato Salad

Elevate your potato salad game with this crispy peri-peri version!

  • 3 Flavourburst
  • 500g baby potatoes, halved & parboiled
  • ¼ cup olive oil
  • 1 ½ tsp garlic powder
  • 1 tsp peri-peri spice
  • ¼ cup spring onion, chopped
  • ½ red onion, finely chopped
  • ¼ cup parley, chopped
  • 1 cup mayonnaise
  • ¼ peri -peri sauce of your choice
  • salt & pepper, to taste
  • crispy bacon, optional
  • chopped parsley

How To Make Crispy Peri-Peri Potato Salad

  1. Preheat oven to 180°C.
  2. Place parboiled potatoes in a baking tray, drizzle over olive, garlic powder and peri-peri spice toss until potatoes are well coated.
  3. Place into the preheated oven and roast for 30 minutes until golden brown and crispy.
  4. Remove from the oven, sprinkle over maldan salt and set aside.
  5. In a bowl combine mayonnaise and peri-peri sauce until well combined.
  6. Place crispy potatoes, sauce mixture, spring onion, red onion and parsley into a bowl, season to taste with salt & pepper, then mix until well combined and serve immediately.
  7. Garnish with fresh parsley and crispy bacon.
