Crispy Peri-Peri Potato Salad
Elevate your potato salad game with this crispy peri-peri version!

Ingredients:
- 3 Flavourburst
- 500g baby potatoes, halved & parboiled
- ¼ cup olive oil
- 1 ½ tsp garlic powder
- 1 tsp peri-peri spice
- ¼ cup spring onion, chopped
- ½ red onion, finely chopped
- ¼ cup parley, chopped
- 1 cup mayonnaise
- ¼ peri -peri sauce of your choice
- salt & pepper, to taste
- crispy bacon, optional
- chopped parsley
How To Make Crispy Peri-Peri Potato Salad
- Preheat oven to 180°C.
- Place parboiled potatoes in a baking tray, drizzle over olive, garlic powder and peri-peri spice toss until potatoes are well coated.
- Place into the preheated oven and roast for 30 minutes until golden brown and crispy.
- Remove from the oven, sprinkle over maldan salt and set aside.
- In a bowl combine mayonnaise and peri-peri sauce until well combined.
- Place crispy potatoes, sauce mixture, spring onion, red onion and parsley into a bowl, season to taste with salt & pepper, then mix until well combined and serve immediately.
- Garnish with fresh parsley and crispy bacon.
