Crispy Yolks on Toast

  • 2 slices ciabatta bread, toasted
  • 3-4 tbsp Clover Butter, softened
  • 2 egg yolks
  • 1/3 cup panko crumbs
  • ½ tsp garlic powder
  • Salt
  • 1 avocado, sliced
  • ½ lemon
  • 2 tsp smoked chilli flakes (optional)
  • Cracked black pepper
  • 1 cup canola oil

How To Make Crispy Yolks on Toast

  1. Place the panko crumbs in a bowl or plate, season with garlic powder and salt.
  2. Carefully coat the egg yolks in the crumb mixture, then place in the fridge for 15 minutes to chill.
  3. In a small saucepan, heat the canola oil.
  4. Spread the butter over the bread.
  5. Top with the sliced avo, squeeze over fresh lemon juice and season with salt and pepper.
  6. Gently fry the egg yolks, one yolk at a time, in the hot oil until lightly golden, carefully remove from the pan and onto the toast.
  7. Finish with smoked chilli flakes.
