Crosse & Blackwell Fish Tacos with Mango Salsa

Ingredients:

4 hake portions
1 tbsp fish spice
2 tsp olive oil
1 lime, halved
1 cup mango (or pineapple)
1/4 cup red onions, diced
2 tbsp coriander, finely chopped
1 green chilli, finely chopped
2 cups rainbow slaw
6 tortilla wraps, warmed
Salt and pepper

Method:

In a bowl, add the hake fillets, fish spice, olive oil, salt and pepper. Toss until fish is evenly seasoned. Heat a skillet and drizzle a bit of olive oil. Cook the fish for 2-3 minutes on each side or until cooked through. Transfer the fish onto a plate and drizzle the juice of half a lemon.
Make the salsa; combine the mango, red onion, coriander, chilli, juice of remaining lime and salt and pepper in a bowl.
To assemble tacos, flake the fish or cut into small pieces. Place the rainbow slaw on the tortillas, add the fish, spoon over the salsa and finish off with dollops of mayo.

Chefs Tip: If mangoes are not readily available, you can substitute them for pineapple.
