Ingredients:
Leftover roast potatoes
150h-200g steaky bacon
½ onion
1 red pepper, sliced
4 eggs
handful chives, chopped

You airfryer is your best friend when it comes to bringing leftovers back to life, simply reheat you leftover fries or roast potatoes and they’ll be as crispy as they were when they just came out the fryer.
No airfryer? No problem!
Cook a pack of steaky bacon in a pan over a medium heat with a little sunflower oil until the bacon just becomes crispy.
Remove the bacon and add half an onion and 1 sliced red pepper. Cook for 2 minutes.
Roughly chop your roast potatoes into large chunks and to the pan. Season lightly and press down gently.
Shape out 4 little pockets before cracking 4 eggs into the spaces. Cover with a lid to coon the eggs for 5 to 6 minutes or until the whites are set. Roughly chopped your bacon and sprinkle over finishing with chives to garnish. Serve in the pan allowing your guests to scoop their own hash out.

Crispy leftover sticky rice
Sticky rice is delicious with Asian food and we always make more than we need for leftovers.
Serves: 1 – 2
Time: 10 minutes

Ingredients:
Left over sticky rice
oil for frying
3 Tbsp sliced jalapeños
½ Cup cream cheese
100g smoked salmon ribbons
lemon wedges, to serve
Method:
Line a container/Tupperware with plastic wrap and press your rice into the container, compacting it slightly. Place in the fridge over night or until needed.
Heat oil for shallow frying. Gently remove the pressed rice by pulling at the plastic wrap lining. Cut into squares and fry in the oil, turning over to evenly brown the rice to crispy perfection.
For a delicious topping, Roughly chop some jalapeños and mix with cream cheese. Spoon a little on the crispy rice squares and finish with a thin ribbon of smoked salmon. Serve with a wedge of lemon on the side.
