Orange cake drizzled with orange cream cheese and pistachio crumble

Ingredients:

1 Cup white sugar
4 extra large eggs
1 Cup of oil
2 Cups of self raising flour
1 Cup of freshly squeezed orange juice
3 tsp baking powder
2 Tbsp of orange zest

Cream cheese drizzle:
250g of beaten full fat cream cheese
2 Cups of icing sugar
100g of pure butter
1 tsp orange essence
1 Cup orange juice

Method:

With a stand mixer beat 1 cup of sugar with 1 egg followed by the other eggs one at a time until fully incorporated for about 2 minutes on medium speed.
While your mixer is still on drizzle in your 1 cup of oil.
Then add your sifted self raising flour and baking powder until fully incorporated.
Then drizzle in your 1 cup of orange juice.
Fold in your orange zest. Bake on 180 degrees Celsius for 30 minutes.

Cream Cheese Drizzle:
In a medium size pot heat cream cheese, butter and half a cup of orange juice on low heat with a whisk until it has reached a runny consistency then add the rest of the ingredients and bring to boil, continue stirring until it forms a more thicker running consistency.
Drizzle the sauce over your orange cakes and top with fresh crumbed pistachios.

Cinnamon Butter Cake

Ingredients:

230g pure butter
1 Cup of boiling water
1 Cup of white sugar
1 Cup of brown sugar
½ tsp salt
1 tsp bicarbonate of soda
2 ½ tsp of fine cinnamon
2 ¼ Cup of cake flour
½ tsp salt
2 tsp vanilla essence
½ Cup of sour cream
2 extra large eggs

 

Method:

Preheat oven to 180 degrees.
Line pan with spray and cook.
In a medium pot bring water and butter to a rolling boil, remove from the heat and place in your metal bowl.
Mix on medium speed for 2 minutes. Add brown and white sugar.
Sift the rest of the dry ingredients then spoon into mixing bowl and mix on low speed.
Whisk vanilla essence, eggs and room temperature sour cream then drizzle in the mixing bowl.
Bake on 180 degrees for approximately 25-30 minutes.
