Transport yourself from South Africa to the Phillipines!

 

Ingredients:

  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • ¼ cabbage, chopped
  • 2 medium-sized sweet potatoes, peeled and cubed
  • 350 g green beans, trimmed
  • 2 medium-sized carrots, grated
  • 1 tsp salt
  • ½ tsp black pepper
  • Spring roll wrapper
  • 1 x egg white, set aside

How To Make Filipino vegetable spring rolls

  1. Sautee garlic and onions until brown
  2. Add cabbage
  3. Season with salt and pepper
  4. Add sweet potatoes
  5. Add green beans
  6. Add grated carrots
  7. Cook until sweet potatoes are cooked but still firm
  8. Let it cool down and set aside to drain out the juice
  9. Once all juices are drained, take a spoonful of vegetable and place in the edge of a spring roll wrapper (positioned diagonally)
  10. Start rolling so that the veggies are neatly tucked in the wrapper
  11. Seal edges with egg white

Ingredients:

  • ½ kg skinless chicken thighs
  • ¼ cup apple cider vinegar
  • ½ cup light soya sauce
  • 1 tsp crushed garlic
  • 1 medium size onion
  • 2 medium potatoes , washed, peeled & cut into quarters
  • 2 bay leaves
  • Black pepper corns
  • ¼ tsp salt
  • 14g fresh ginger grated
  • 1 Tbsp brown sugar

How To Make Chicken Adobo

  1. In a bowl, mix all the ingredients, except the potatoes
  2. Let it marinade for 30 minutes
  3. Heat a pot over medium heat
  4. Transfer everything into the pot, turn to low let it cook for 30 minutes
  5. Add potatoes
  6. Cook for another 15 minutes
  7. Serve with steamed white rice.

Ingredients:

  1. 6 medium size eggs
  2. 1 tin condensed milk
  3. 1 tin evaporated milk
  4. ¼ cup brown sugar
  5. 2 Tbsp water
  6. 1 tsp vanilla essence
  7. Canned fresh cream, to garnish
  8. 250g fresh strawberries, to garnish

How To Make Filipino Leche Flan

  1. In a bowl, separate the yolk from the egg whites.
  2. You will need six yolks and 2 egg whites.
  3. Gently mix to break down the yolk, add the condensed milk & evaporated milk, followed by the vanilla essence.
  4. Gently fold the ingredients together and mix gently to avoid foam and set aside.
  5. In a baking tin or mould put ¼ cup brown sugar, add 2 Tablespoons water.
  6. Over low heat wait for the sugar to caramelized (the sugar will melt into a clear liquid and then progresses to a golden amber colour)
  7. Pour the egg mixture into the mould and cover with foil.
  8. Use a steamer and fill with 1.5L of water.
  9. Place the mould/baking tin in the middle of the steamer for 45 minutes to an hour.
  10. Let it cool down.
  11. Once cool, place the leche flan inside the refrigerator and let it set for 30 minutes before serving.
  12. Garnish with canned fresh cream and strawberry pieces.
