Ingredients:

  • 500g fusilli pasta
  • 1 cup peas (preferably fresh otherwise frozen will do)
  • 2 feta wheels or 1/2 cup parmesan shavings
  • 20g fresh dill
  • 20g fresh basil
  • 1/2 cup green olives, pitted
  • 2 green peppers (pan fried)
  • 1 medium red onion
  • Olive oil
  • Vinaigrette:
  • ¾ cup olive oil
  • ¼ cup red or white wine vinegar
  • 2 teaspoons Dijon mustard
  • Salt
  • Freshly ground black pepper

How To Make Green ‘n Herby Pasta Salad

  1. Cook the Fusilli pasta until al dente. Remove and place in the fridge to allow it cool fully.
  2. Meanwhile, sear the green pepper until charred
  3. Finely chop most of the dill, basil, olives and red onion.
  4. Prepare the vinaigrette
  5. Assemble the pasta salad and enjoy

Ingredients:

  • Wraps:
  • 1 cup cooked and mashed white sweet potato OR 1 cup cooked and mashed butternut
  • 1 cup all-purpose four (gluten free flour can also be used)
  • Salt
  • Cajun Chicken:
  • 600g Chicken breast
  • 1 tbsp Cajun Seasoning
  • Olive Oil
  • Salt
  • Basic Salsa:
  • 1 medium red onion
  • baby tomatoes
  • 1 Lemon
  • Avocado Cream Sauce:
  • 1 large ripe avocado
  • 20g of fresh cilantro
  • Juice of 1 medium lime
  • 1 jalapeno, deseeded
  • 2 cloves garlic
  • ½ teaspoon cumin powder
  • 2-3 tablespoon water
  • salt to taste

How To Make Chicken Wraps

  1. Add the cooked mashed sweet potato, flour together and salt together.
  2. Knead until just combined. Section and roll into tacos.
  3. Cook in a dry pan until slightly charred. Set aside
  4. Cut chicken breasts into strips and coat with the cajun seasoning and olive oil. Pan sear until fully cooked. Set aside.
  5. Dice the onion and tomatoes and coat with the lemon juice. Set aside.
  6. Blend all the avocado cream sauce ingredients together in a food processor.
  7. Assemble and enjoy.

  • 2 large heads of lettuce
  • 500g Chicken
  • 200g streaky bacon (oven baked)
  • 2 Large tomatoes
  • 1 large ripe avocado
  • 1 Cup parmesan/White Cheddar Cheese
  • Simple herby mayo:
  • ½ Cup mayonnaise
  • 1 medium red onion
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • ¼ tsp black pepper
  • Brown Wax Paper

How To Make BLT Chicken Lettuce Wraps

  1. Remove core from the lettuce
  2. Fill the lettuce with the pan seared chicken breast, dressing, chopped streaky oven baked bacon, tomato, avocado.
  3. Wrap up tightly using the wax paper, slice in half and enjoy.
