Good old fashioned chicken soup

Ingredients:

  • 1 chicken, skin removed
  • 2 L water
  • 2 onions, chopped
  • 4 leeks, chopped
  • 2 carrots, chopped
  • 2 turnips, chopped
  • 2 celery stalks and tops, chopped
  • 2 bay leaves
  • 3 cloves
  • 6 black peppercorns
  • 200 g small pasta shapes

How To Make Good old fashioned chicken soup

  1. Place all the ingredients into a saucepan except the pasta. Cover with cold water and bring to a boil.
  2. Turn the heat down and let it simmer until the chicken meat falls off the bone. It will take about 1 hour.
  3. Strain and reserve the liquid and spoon off any of the excess chicken fat.
  4. Chop the chicken into small pieces and add back to the soup liquid.
  5. Add the pasta and cook until al dente. Serve with crusty bread.

Nana’s Favourite Soup

Ingredients:

  • 1/2 Butternut, cubed
  • 2 carrots, cubed
  • 2 potatoes, cubed
  • 1/4 Cup Cream
    Onion, diced & crushed garlic
  • Parsley
  • Pinch of Garlic Salt, to taste
  • 1/2 tsp Cayenne pepper, for the kick
  • 1 tsp Cumin powder
  • 1 tsp Curry powder
  • 1 L Veg stock
  • 2 Basil leaves, for garnish
  • Crumbled feta cheese (for garnish)
  • Toasted ciabatta bread with butter, to serve

How To Make Nana’s Favourite Soup

  1. Fry onion & garlic until translucent.
  2. Add spices, salt, cumin & curry powder.
  3. Add vegetables & toss the vegetables.
  4. Add veg stock & boil for 5min, then add cayenne pepper.
  5. Let it boil for further 15min or until soft.
  6. You can add the cream & remove from the stove.
  7. Blend all together (optional) & put garnish (basil & crumbled feta cheese)
  8. Serve with toasted ciabatta bread with butter.
  9. Bon appetite.
