Culinary Hotline - The Ultimate Rice Masterclass
A masterclass in simplicity: perfectly cooked rice.
Ingredients:
- 1 cup Premium Basmati Rice
- 1 ¾ cups Cold Water
- 1 tsp Salt
How To Make Basmati Rice
- Place the Basmati rice into a large bowl and cover with cold water. Gently swirl the grains with your fingers—the water will instantly turn cloudy with surface starch.
- Drain the water completely and repeat this rinsing process 3 to 4 times, or until the water remains completely crystal clear. This is the absolute golden rule to ensure the cooked grains stay light and separate rather than clumping together.
- For extra-long, delicate grains, let the washed rice soak in fresh cold water for 10–15 minutes before cooking, then drain thoroughly.
- Transfer the drained rice into a medium saucepan. Pour in exactly 1 ¾ cups of cold water and add the salt. Place the pot over high heat and bring it to a rolling boil.
- As soon as the water boils vigorously, give it one quick stir to release any trapped grains from the bottom. Immediately turn the heat down to its lowest possible setting and cover tightly with a secure, well-fitting lid.
- Cook undisturbed for exactly 12 minutes—no lifting the lid to peek! Remove the pot from the heat source entirely, keeping the lid tightly sealed, and let it steam in its own residual heat for 5 minutes. Remove the lid, gently slide a fork through the grains to fluff and separate them, and serve.
Ingredients:
- 2 cups Long Grain Parboiled Rice
- 1 Large Onion, finely diced
- 1 Red Bell Pepper, diced
- 1 Green Bell Pepper, diced
- 2 tbsp Butter
- 1 tbsp Canola Oil
- 2 tsp Turmeric
- 2 tsp Smoked Paprika
- 1 tsp Cayenne Pepper (adjust to taste)
- 1 tsp Garlic Powder
- 4 cups Chicken or Vegetable Stock
- Salt and black pepper to taste
How To Make Spicy Rice
- Heat the butter and canola oil in a large, deep pan over medium heat. Sauté the diced onion, red bell pepper, and green bell pepper for 5–6 minutes until soft and translucent.
- Add the turmeric, smoked paprika, cayenne pepper, and garlic powder directly to the vegetables. Stir continuously for 1 minute to toast the spices and bloom their oils until incredibly fragrant.
- Add the dry parboiled rice directly into the spiced vegetable mix. Stir thoroughly for 2 minutes, ensuring every grain of rice is coated in the golden, spiced oil.
- Pour in the stock and season generously with salt and pepper. Bring to a boil, then turn the heat down to low, cover with a lid, and simmer for 15–18 minutes until the rice has absorbed all the liquid and is beautifully tender.
- Remove from heat, let it rest covered for 2 minutes, then fluff with a fork before serving as the ultimate South African side dish.
Ingredients:
- 1 ½ cups Arborio Rice
- 400g Mixed Wild Mushrooms , sliced
- 1 Large Shallot or small onion, finely minced
- 2 cloves Garlic, finely minced
- 1/2 cup Dry White Wine
- 1.2L Quality Vegetable or Mushroom Stock
- 3 tbsp Butter
- 2 tbsp Olive Oil
- 1/2 cup Parmesan Cheese, freshly grated
- Fresh Thyme leaves
- Salt and freshly ground black pepper to taste
How To Make Wild Mushroom Risotto
- Sear the Mushrooms: Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a wide pan over high heat. Add the mushrooms and thyme leaves, searing until deeply browned and caramelized. Season with salt and pepper, remove from the pan, and set aside.
- Build the Base: Lower the heat to medium. Add the remaining olive oil to the same pan and sauté the minced shallot and garlic until soft but not browned (about 3 minutes).
- Toast the Arborio: Add the Arborio rice directly to the pan. Stir quickly for 2 minutes until the edges of the grains become translucent—this seals the starches and develops a nutty flavor.
- Deglaze: Pour in the white wine, stirring constantly until it has completely evaporated.
- The Gradual Stir: Keep your stock simmering gently in a separate pot nearby. Add one ladleful of hot stock at a time to the rice, stirring gently and continuously. Wait until the liquid is almost completely absorbed before adding the next ladleful. Keep the heat at a medium simmer.
- The Texture Check: Continue this process for about 18–20 minutes. The rice should be plump and suspended in a rich, creamy sauce, but still retain a slight al dente bite in the center.
- The Mantecatura (The Finish): Stir the seared mushrooms back into the pan. Remove the pan from the heat entirely. Vigorously beat in the remaining 2 tablespoons of cold butter and the grated parmesan cheese to create an ultra-glossy, velvety emulsion. Season to taste and serve immediately.
