Decadent Chocolate Cake

When it comes to baking, we’re always chasing that perfect, moist, rich cake, but what if the secret ingredient has been hiding in your fridge all along?

Ingredients:

  • 1½ cups Nola Original Mayonnaise
  • 1½ cups caster sugar
  • 1½ tsp vanilla essence
  • 3 cups cake flour
  • ⅓ cup cocoa powder
  • 2¼ tsp baking powder
  • 1½ tsp bicarbonate of soda
  • 1 cup water
  • ½ cup strong brewed coffee (cooled)
  • ½ cup chocolate chips or chopped chocolate

Optional Ganache Topping:

  • 200g dark chocolate
  • ½ cup cream
  • Heat cream until steaming, pour over chopped chocolate, let sit for 1 minute, then stir until smooth and glossy.
  • Spread over cooled cake.

Or try:

  • Whipped cream with dark chocolate shavings for a light and classic finish.

How To Make Decadent Chocolate Cake 

  1. Preheat oven to 180°C and grease two 20cm round cake tins or one large rectangular baking dish.
  2. In a large bowl, whisk together Nola Mayonnaise, sugar, and vanilla until smooth.
  3. In a separate bowl, sift together the flour, cocoa powder, baking powder, and bicarb.
  4. Add the dry ingredients to the wet mixture, alternating with the water and coffee, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into your prepared tin(s) and bake for 30–35 minutes or until a skewer inserted comes out clean.
  7. Cool completely before decorating.
