Easy Christmas Gravy & Chocolate Christmas Tree Pretzels

Ingredients:

  • For gravy:
  • 6 tbsp butter
  • 1 onion, chopped
  • 1 carrot, peeled and cubed
  • 1 rib celery, chopped
  • ¼ cup Golden Cloud Cake Flour
  • 1 ½ cup chicken stock
  • 1 ½ cup beef stock
  • 2 bay leaves
  • 2 sprigs fresh sage
  • 2 sprigs fresh rosemary
  • For pretzels:
  • 80g Beacon Ivory Cream Chocolate
  • Green food colouring
  • 60g Pretzel sticks
  • Festive sprinkles

How To Make 

  1. For gravy: Melt the butter in a skillet over medium heat. Add the onion, carrot and celery and saute for 5-8 minutes or until soft.
  2. Add the flour and cook until lightly browned.
  3. Add the stocks and fresh herbs, and stir to combine, removing any stuck bits from the bottom.
  4. Allow the gravy to simmer for 20-25 minutes, stirring occasionally.
  5. Once ready, the gravy should be thick enough to coat the back of a spoon.
  6. Use a strainer and drain the gravy. Discard the vegetables. Season with salt and pepper to taste.
  7. For pretzels: Prepare a baking tray with parchment paper.
  8. Break the chocolate into a bowl, and melt in the microwave. Stirring every 30 seconds until smooth.
  9. Colour the chocolate green. Place the melted chocolate in a piping bag.
  10. Arrange pretzels about 7cm apart on the baking sheet. Line them up in rows, leaving equal distance in between.
  11. Cut a small hole off the tip of the piping bag.
  12. Start with a small zigzag at the top of the pretzel and continue creating a longer zigzag as you reach the bottom to create a triangle shape. 
  13. Decorate with sprinkles. Allow to harden for at least 60 minutes.
  14. Remove from the parchment paper and serve.
