  1. Prepare the base: Slice your hard-boiled eggs in half lengthwise. Place a small dollop of sour cream or mayo directly onto each egg yolk.
  2. Layer the “Elote”: Top with a spoonful of charred corn, followed by the diced red onion and jalapeño.
  3. Add the salt & zest: Sprinkle generously with crumbled cotija cheese and Tajín seasoning.

  2. Load the egg: Slice the hard-boiled eggs in half. Mound a generous tablespoon of the buffalo chicken mixture onto each egg half.
