Egg Flights

Ingredients:
- 1/2 cup Roasted Corn (charred in a pan)
- 2 tbsp Sour Cream or Mayo
- 2 tbsp Cotija Cheese, crumbled
- 1 tbsp Red Onion, finely diced
- 1 small Jalapeño, finely diced
- 1 tsp Tajín Seasoning
- Fresh Cilantro for garnish
- Fresh Lime wedges

- Prepare the base: Slice your hard-boiled eggs in half lengthwise. Place a small dollop of sour cream or mayo directly onto each egg yolk.
- Layer the “Elote”: Top with a spoonful of charred corn, followed by the diced red onion and jalapeño.
- Add the salt & zest: Sprinkle generously with crumbled cotija cheese and Tajín seasoning.
