Eggplant Lasagne
The easiest dinner with just three ingredients! #DennyDeliciousness

Ingredients:
3-4 large eggplant
415g DENNY Creamy Mushroom Sauce
1 – 1 ½ cups grated cheese
How To Make Eggplant Lasagne
- Cut the eggplant lengthways into a few slices, place in a bowl and cover with coarse salt to pull the moisture out.
- After 20 min, remove from the salt, rinse thoroughly then pat dry.
- Into a hot griddle pan brushed lightly with oil, grill the eggplant.
- Do this in batches until all the eggplant is grilled.
- In the meantime, pre-heat oven to 195°C. Heat the DENNY CREAMY MUSHROOM SAUCE in a small pot for 2-3 min then set aside.
- Into your lasagne dish, add a few spoonful’s of the DENNY CREAMY MUSHROOM SAUCE as the base then follow with a few slices of the eggplant and a generous helping of the cheese.
- Repeat this layering process until you have used up all the eggplant, sauce and cheese.
- Bake in the oven for 10 -15 min or until golden brown then serve and Enjoy!
