Boerewors Meatball Pasta with Tomato Smoor Base Recipe

Ingredients:
- 1 packet Fatti’s and Moni’s Bellissimo Bucatini Hollow Spaghetti (500g)
- 600g Boerewors, sausage removed from casing
- 2 onions, diced
- 1 large egg
- ¼ cup flour
- 4 garlic cloves, minced
- Handful fresh parsley
- ¼ cup olive oil
- 5 whole tomatoes
- 1 can chopped tomatoes
- 1 tbsp tomato paste
- 1 tbsp sugar
- 1 cup beef stock
- Handful basil leaves, chopped
- ½ cup fresh thyme
- ½ cup grated parmesan cheese
How To Make Boerewors Meatball Pasta with Tomato Smoor Base
- Preheat the oven to 180C and prepare a baking sheet.
- On a baking tray place chopped onion, garlic, tomatoes, thyme
- Drizzle with olive oil and season well and roast for 20 minutes
In a large mixing bowl combine the boerewors meat, half the onion, egg, flour, half the garlic and parsley. - Roll to meat into golf size balls
Prepare a large skillet and golden fry the meatballs for 12-15 minutes and set aside to make the sauce. - Once oven grilled veggies are done transfer to a Nutri Bullet blender and blend, In the same large skillet transfer the blended mixture
- Add paste, stock, chopped basil, adjust consistency with stock and season
Transfer meatballs in the sauce, simmer for 5 minutes and prepare to dish up
Cook the Fatti’s and Moni’s Spaghetti Bucatini according to packaging instructions and set aside. - Divide the pasta amongst the serving bowls, top with meatballs and sauce. Sprinkle over the parmesan and serve
