Boerewors Meatball Pasta with Tomato Smoor Base Recipe

These are people who love all things centred around Italian culture, and even go as far as identifying as “ama’taliano”.

  • 1 packet Fatti’s and Moni’s Bellissimo Bucatini Hollow Spaghetti (500g)
  • 600g Boerewors, sausage removed from casing
  • 2 onions, diced
  • 1 large egg
  • ¼ cup flour
  • 4 garlic cloves, minced
  • Handful fresh parsley
  • ¼ cup olive oil
  • 5 whole tomatoes
  • 1 can chopped tomatoes
  • 1 tbsp tomato paste
  • 1 tbsp sugar
  • 1 cup beef stock
  • Handful basil leaves, chopped
  • ½ cup fresh thyme
  • ½ cup grated parmesan cheese

How To Make Boerewors Meatball Pasta with Tomato Smoor Base

  1. Preheat the oven to 180C and prepare a baking sheet.
  2. On a baking tray place chopped onion, garlic, tomatoes, thyme
  3. Drizzle with olive oil and season well and roast for 20 minutes
    In a large mixing bowl combine the boerewors meat, half the onion, egg, flour, half the garlic and parsley.
  4. Roll to meat into golf size balls
    Prepare a large skillet and golden fry the meatballs for 12-15 minutes and set aside to make the sauce.
  5. Once oven grilled veggies are done transfer to a Nutri Bullet blender and blend, In the same large skillet transfer the blended mixture
  6. Add paste, stock, chopped basil, adjust consistency with stock and season
    Transfer meatballs in the sauce, simmer for 5 minutes and prepare to dish up
    Cook the Fatti’s and Moni’s Spaghetti Bucatini according to packaging instructions and set aside.
  7. Divide the pasta amongst the serving bowls, top with meatballs and sauce. Sprinkle over the parmesan and serve
