French Toast Cake

Foodie Herman Lensing is in love with French Toast and expects to see this dish pop up in all shapes and sizes on menus this year!

  • 8 croissants
  • 400g ricotta cheese
  • 125g blueberries (fresh or frozen)
  • 100g (125 ml) sugar
  • 200g white chocolate, finely chopped
  • 800ml of milk
  • 6 eggs
  • 5ml of vanilla essence
  • 250ml vanilla custard for serving
  • Roses for garnish (optional)

How To Make French Toast Cake

  1. Heat oven to 180 °C.
  2. Cut croissants into bite-sized pieces and place in mixing bowl. Crumble in ricotta.
  3. Add berries, sugar, chocolate, milk, eggs and vanilla essence. Mix well.
  4. Spray a 2-quart cartridge pan well with non-stick cooking spray.
  5. Scoop mixture into pan and place in hot oven.
  6. Bake for 25-30 minutes or until set and the top is nicely golden brown.
  7. Leave to cool until lukewarm, turn out onto a serving plate and pour over custard.
  8. Sprinkle with rose petals and serve.
