French Toast Cake Foodie Herman Lensing is in love with French Toast and expects to see this dish pop up in all shapes and sizes on menus this year!Recipe by Herman Lensing Ingredients:8 croissants400g ricotta cheese125g blueberries (fresh or frozen)100g (125 ml) sugar200g white chocolate, finely chopped800ml of milk6 eggs5ml of vanilla essence250ml vanilla custard for servingRoses for garnish (optional) How To Make French Toast CakeHeat oven to 180 °C.Cut croissants into bite-sized pieces and place in mixing bowl. Crumble in ricotta.Add berries, sugar, chocolate, milk, eggs and vanilla essence. Mix well.Spray a 2-quart cartridge pan well with non-stick cooking spray.Scoop mixture into pan and place in hot oven.Bake for 25-30 minutes or until set and the top is nicely golden brown.Leave to cool until lukewarm, turn out onto a serving plate and pour over custard.Sprinkle with rose petals and serve.
