One Pot Chicken

Carishma Basday shares her easy, go-to one pot chicken dish!

Ingredients:

  • Chicken thighs, skin on
  • Onion, thinly sliced
  • Garlic
  • Olive oil
  • Mixed dried herbs
  • Butternut chunks
  • 1 tin brown lentils, drained & rinsed
  • 1 tin Chickpeas, drained & rinsed
  • Zucchini finely sliced into thin rounds
  • Miso paste
  • Chicken broth

How To Make One Pot Chicken

  1. In your medium heated casserole dish, add olive oil and onions and sauté until golden brown.
  2. Add the garlic and cook until fragrant, then adds the chicken thighs, skin side down and allow to cook until golden.
  3. Once the chicken skin has browned flip them on the opposite side to cook until golden.
  4. Season the chicken with salt before adding the tinned lentils, chickpeas, butternut, dried mixed herbs and top with chicken broth.
  5. Allow to simmer, top with lid and then place into a preheated oven of 180°C. Allow to cook for 60-90minutes.
  6. In the meantime add some oil to a non-stick pan, add the zucchini rounds and allow to get golden brown on each side.
  7. In the last 10 minutes of cooking the casserole, add the sautéed zucchini, combine and place back into the oven to cook for the last 10 minutes.
  8. Remove from the oven and serve.
