Fruits of the Forest & Banana Crepes

Ready for a simply-yet impressive fruity breakfast? Our Fruits of the forest banana crepes is one of the reasons to get out of bed this morning.

Serves: 3-4

For the crepes
2 large eggs
¾ cup water
¾ cup milk
2 tbsp butter, melted
1 tsp vanilla essence
1 cup flour
1 tblsp sugar
pinch of salt

For the filling
1 cup Fruits of the Forest, any flavor
2 tbsp icing sugar
1 cups whipped cream
2 bananas’ s cut into slices
Maple syrup for drizzling


Add the flour, sugar and salt to a large bowl and mix to combine. Make a well in the middle and whisk in eggs, water, milk, butter and vanilla essence. Allow to stand for at least 20 minutes.
Heat a frying pan with oil or butter and pour a ladle spoon full of batter into the centre of the pan to coat bottom of the pan evenly. Cook for a minute then turn crepe. Make a few until the batter is used up and allow to cool

Fold the Fruits of Forest and icing sugar into the whipped cream. Place the Fuits of the Forest on one end of the crepe, top with sliced bananas and fold over. Drizzle with maple syrup to serve
