Fruits of the Forest Berry Almond Cake
A soft and moist berry almond cake is a great way to kickstart your morning.

¾ cup castor sugar
2 large eggs
1 tsp vanilla essence
½ tsp almond essence
1 ½ cups flour
¾ cup ground almonds
2 tsp baking powder
Pinch of salt
100ml Fruits of the forest, Mixed berry flavour
½ cup raspberries
½ cup strawberries, chopped
1/3 cup flaked almond
Icing sugar for dusting
Preheat the oven to 180C.
In a large mixing bowl, beat butter and sugar with an until pale and creamy.
Add eggs, vanilla and almond essence and beat to combine. Add flour, almond meal, baking powder and salt, along with the Fruits of the Forest and milk. Gently mix together, until cake batter is smooth and creamy.
Add half of the berries into the batter. Transfer batter to prepared pan. Press remaining berries on top. Scatter over flaked almonds.
Bake for approximately 40 minutes or until a skewer comes out clean.
Leave cake to cool for 10 minutes before carefully transferring to a cooling rack to cool completely. To serve, dust cake lightly with icing sugar.
