Selati Milk Tart Malva Pudding

Milk Tart Malva Pudding is a soft sponge soaked in a decadent sauce and topped with an indulgent layer of gently cinnamon spiced milk tart filling, once its set you’ll enjoy every moment with each slice.

Ingredients:

Milk tart filling:
1 cups milk
10g butter
1 tsp vanilla essence
1 tsp ground cinnamon
2 tbsp flour
2 tbsp cornflour
¼ cup Selati Castor Sugar
pinch of salt
1 egg

Pudding:
4 large eggs
3 tbsp butter
1 tbsp grated orange zest
½ cup apricot jam
1¼ cup Selati Castor Sugar
1 ½ cup milk
2 cups flour
2 tsp baking soda
1 tsp salt

sauce:
2 cups evaporated milk
½ cup Selati Muscavado
160g butter
1 tsp almond extract
1 tbsp vanilla essence

2 tsp cinnamon, for dusting

Method:

Preheat the oven to 180°C and prepare a baking dish.
In a saucepan make the milk tart filling; combine half the milk, butter, vanilla essence and cinnamon. Bring to a gentle simmer. In a bowl whisk egg, add the flour, cornflour, remaining milk, sugar and salt until smooth. Slowly temper the hot milk into the egg mixture. Add the whole mixture back into the saucepan and whisk until the mixture thickens. Once thickened, pour the mixture into a bowl and cover with plastic wrap directly touching the mixture and cool.
In a large bowl beat the eggs, orange zest, sugar, butter and apricot jam until light and fluffy. In a separate bowl sift together the flour, baking soda and salt. Gradually fold in the flour mixture into the egg mixture. Pour the mixture into the greased dish and bake for 25-30 minutes until the skewer tests clean.
To make the sauce, heat the milk, muscavado, almond and vanilla essence over medium heat until the sugar has dissolved and remove from the heat.
Poke holes in the cake and then pour over the sauce and allow to soak.
Evenly spread the milk tart custard over the pudding.
Place in the fridge and allow to set for 3 hours or overnight.
Dust over some cinnamon, cut into cubes and serve!

Chefs Tip: Refrigerating the pudding for 3 hours or more, helps ensure that the pudding sets giving you clean cut slices.
