Fruits of the Forest Oat Streusel Cookies

Baked nuggets of oaty, fruitiness with a hint of streusel might become a new breakfast fave with a twist on a classic cookie. It comes together with just a few ingredients and is perfect for those mornings when you have no time at all, thanks to Clover Fruits of the forest dairy snack.

¾ cup olive oil
¼ cup butter
1 cup brown sugar
1 large egg
1 tsp vanilla essence
1 ½ cup flour
1 cup oats
1 tsp baking powder
1 tsp ground cinnamon
pinch of salt

For the streusel topping
½ cup dark brown sugar
¼ cup oats
1 tsp ground cinnamon
2 tbsp olive oil

Fruits of the Forest, Mixed fruit for topping
Raisins /dried raspberries for garnish


Preheat oven to 180C.
Place the olive oil, butter, sugar into a bowl and beat for a few minutes.
Add the eggs one at a time, beating after each addition then stir in the vanilla.

Sift in the flour, baking powder and salt and stir fold in the oats. Mux until combined. Tear off pieces of the dough and form into even sized cookies. Make indent in the centre of each cookie.
Bake for 15-20 minutes or until golden brown. Mix together the streusel topping. Dollop Fruits of the Forest into the indent, sprinkle with streusel and raisins for garnish
