Olive Pride Lemon & Poppy Seed Loaf

When life gives you an abundance of lemons, during citrus season, simply turn them into the most delicious lemon and poppy seed Olive Pride loaf cake.

3 eggs
1 cup Olive Pride Blend
1 cup milk
1 cup brown sugar
2 cups flour (or almond flour)
1 tsp baking powder
pinch of salt
2 tbsp poppyseeds
juice and zest of 1 lemon

For the glaze
1 cup icing sugar
Juice and zest 1 lemon
1 tsp vanilla essence


Preheat the oven to 180C
Line and grease a loaf pan
In a large bowl, whisk together the eggs, olive oil, sugar and milk. Sift in the flour, baking powder and salt. Stir in the poppy seeds, zest and juice of the lemon.
Pour into prepared loaf tin and bake for 40-45 minutes or until a skewer comes out clean.
Mix together the ingredients for the glaze and drizzle over the loaf, slice and serve.
