Golden Cloud & Beacon Carrot Cake Waffles

When the best of both worlds collide!

Ingredients:

500g Golden Cloud Carrot Cake Mix
150ml sunflower oil
250ml water
2 eggs

For the filling:
1 cup Beacon Heavenly Cookies and Milk
1 cup cream cheese
2 cups vanilla ice cream
2 tsp ground cinnamon

Method:

Heat and prepare a waffle iron
Place the Golden Cloud Carrot Cake mix in a medium sized bowl. In a separate bowl, whisk together the oil, water and eggs. Make a well in the centre of the cake mix and add the liquid ingredients. Whisk the batter until smooth.
Pour ¼ cups of batter into the waffle iron and cook.
For the filling:
Melt the Beacon Heavenly Cookies and Milk chocolate in a small bowl. Place the cream cheese in a large bowl and whisk with an electric whisk until soft. Fold in the vanilla ice cream, melted chocolate and cinnamon. Place the mixture in the freezer for 20 minutes.
Once the waffles are ready, top with the cinnamon ice cream and enjoy
