Golden Cloud & Beacon Treats Chocolate Star Bread
Inspired by World Chocolate Day, of how your bake can stand out amongst the dozens of entries. Chocolate Star bread looks beautiful and is deliciously indulgent.

2 tsp instant dry yeast
3 tbsp white sugar
¾ cup milk, warm
¼ cup butter, room temperature
2 ¼ cup Golden Cloud Cake Flour, plus more as needed
1 tsp salt
3 slabs Beacon Midnight Velvet, chopped
½ cup cream
50g butter, melted
1 egg, beaten
Icing sugar, for dusting
1 slab Beacon Milk Chocolate shavings
1 slab Beacon Ivory Chocolate, shavings
Preheat the oven to 180C and prepare a baking sheet.
Pour the yeast and sugar in a large bowl. Add the warm milk and gently stir, cover and allow to sit for 5-10 minutes until the mixture begins to look froth. add the butter, egg, flour and salt and combine. the dough will be soft. Using lightly floured hands, form the dough into a ball. If the dough is too sticky to handle, add a few more tablespoons of flour. But you want a very soft dough. Place the dough in a greased bowl and cover with plastic wrap. Allow to proof in a warm area until the dough has doubled in size. Make the filling by placing the chocolate and cream in a bowl, place the bowl in the microwave and melt the chocolate, stirring in 30 second intervals. Add the butter and mix until smooth. Punch the dough down to release the air. Divide the dough into 4 equal pieces and use a rolling pin to roll out each piece into 25cm circles. Place the first circle on a baking sheet. Scoop on the filling and spread on the dough, place another dough and repeat the process leaving the final layer without chocolate spread. Use a pizza cutter and cut edges off, creating an even circle. Place a small bowl in the centre of the bread and make an indent. This is the centre of the star. Using a pizza cutter, cut 16 even strips. Using both hands, grab two strips and twist them away from each other twice, then press the two ends together to make a point. Your star bread will have 8 points. Cover with a damp cloth and allow to rest for 20 minutes. Using a pastry brush, lightly brush the star bread with egg wash. Bake for 25-30minutes or until golden brown on top. Cool for 5 minutes, dust the icing sugar and top with the chocolate shavings.
