¼ cup brown sugar
½ cup white sugar
1 large eggs
1 tsp vanilla essence
1 ¼ cups flour
1 tsp baking soda
1 cup chocolate chips
360g caramel treat
½ cup roasted peanuts, roughly chopped
1 cup milk chocolate chips
1 tbsp Nuts About Cooking coconut oil
200g Salted Pretzels knots

Preheat the oven to 180C and prepare a small square baking pan.
In a large bowl, beat the coconut oil and sugars until combined. Add the egg and vanilla and beat until combined and creamy. Add the flour, baking soda and combined. Fold in the chocolate chips. Spread the dough out in the prepared pan and bake for 15-20 minutes or until cooked through in the centre. Allow to cool. Whisk the caramel treat in a bowl until smooth, add in the peanuts and spread over the cooled cookies. Melt the chocolate and coconut oil together in the microwave until smooth, stirring occasionally. Pour the chocolate mix over the peanut caramel layer. Press the pretzels into the chocolate. Place the bars in the freezer for 30 minutes or until set. Cut into bars

Chefs Tip: Using more brown sugar than white sugar, adds a depth of flavour and richness. It’s a small tweak that makes all the difference
You can make these ahead of time and simply place them in the fridge overnight to set. Once ready to serve you can grab a knife and cut into bars
