
Golden Cloud & Beacon Gingerbread Cake

Ingredients:
For the cake:
1 box Golden Cloud Chocolate Flavoured Cake Mix
2 tsp ground ginger
1 tsp cinnamon
150ml Full Cream Milk
100ml water
75ml sunflower oil
2 large eggs
For the cinnamon glaze:
1 cup icing sugar, sifted
1 tsp ground cinnamon
1 tsp vanilla essence
2-4 tbsp milk
For the gingerbread cookies:
1 ¾ cup Golden Cloud Cake Flour
½ tsp baking soda
½ Tbsp ground ginger
½ Tbsp ground cinnamon
¼ ground nutmeg
¼ ground cloves
Pinch of salt
1/3 cup butter, room temp
¼ cup brown sugar
1 egg
¼ cup honey
For the royal icing:
1 egg white
½ tsp lemon juice
1 ½ icing sugar, sifted
Method:
Preheat the oven to 180C and prepare a Bundt cake tin and baking sheet.
For the cake; in a large bowl, whisk together the Golden Cloud Cake Mix along with the spices. In separate bowl, combine the wet ingredients. Mix the wet ingredients into dry ingredients and stir until just combined
Pour the batter into the loaf tin and bake for 30-40 minutes or until a skewer comes out clean. Cool completely before frosting.
For the cinnamon glaze:
Whisk together the icing sugar and the ground cinnamon. Stir in the vanilla essence and 2 tbsp of milk. Add more milk as needed until the mixture is of a pourable consistency. Pour over the cake and allow to set.
For the gingerbread cookies
In a large bowl, whisk together the flour, baking soda and spices. In a separate bowl, beat the butter until light and fluffy. Add the sugar and beat until fluffy. Add the egg and honey and combine.
Gradually add the flour mixture and mix until combined, do not over mix.
Warp the dough and chill in the fridge for at least an hour.
Roll the dough out between two pieces of parchment paper to 3mm thickness. Place the rolled-out dough back in the fridge for 10 minutes. Using little breadman shaped cookie cutters or a knife and stencil, cut out shapes from the dough and place on the baking sheet. Bake for 8-10 minutes. Cool completely
For the royal icing:
Beat the egg whites and lemon juice together. Adding the icing sugar until the mixture holds stiff peaks. Transfer into a piping bag and decorate the gingerbread man cookies.
To assemble:
