Good Hope Soy Carrot & Ginger Soup

Sometimes the most nourishing foods are the simplest to make, like an immune boosting Carrot and Ginger soup. It comes together in a matter of minutes and warms you from the inside out as it strengthens your immune system too.

Serves: 3-4

Ingredients:

1 onion, chopped
2 cloves garlic, chopped
2 tbsp grated ginger
4-5 carrots, chopped
1 cup vegetable stock
1 cup Clover Good Hope soy milk
Juice and zest of ½ orange
Fresh coriander to serve

Method:

Heat a glug of oil in a large saucepan and fry the onion until soft. Add in the garlic and 1 tbsp of ginger, frying for another minute. Add the carrots, stock, juice and zest of the orange and simmer until the carrots are tender.
Stir in the remaining ginger and Good Hope Soy milk. Blend the until smooth and season with salt and pepper. Serve with fresh coriander

Chefs Tip:

Once you have blended the soup, you can adjust the consistency by adding more Clover Good Hope soy milk to make the consistency thinner


Adding more ingredients like bell peppers will increase the nutritional value and taste of this soup.
